Crispy Parmesan Acorn Squash Rings

Ingredients

  •  2 small acorn squash (or delicata squash) rinsed, deseeded, and sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped parsley
  • 1 cup grated parmesan cheese (organic, grass-fed)


Directions

  1. Preheat oven to 425 F
  2. Mix together olive oil, crushed red pepper, garlic powder, salt, & parsley.
  3. Place grated parmesan in a bowl.
  4. Toss squash in the olive oil mixture, then press both sides into the grated parmesan and then put into a greased baking dish.
  5. Sprinkle any remaining grated parmesan on top of the squash.
  6. Bake for 20 minutes or until the cheese is a deep golden brown.
  7. Enjoy!
