1 1/4 cup walnuts + pecans
1 1/2 cup sliced almonds
1/2 cup hulled pepitas + sunflower seeds
1/4 cup chia, hulled hemp, flax + sesame
seeds1/2 cup unsweetened coconut flakes(not
shredded)2 Tbsp organic, cold-pressed coconut oil
melted(add another tablespoon of using
honey)1/3 cup real maple syrup(or organic raw
honey)2 tsp vanilla extract
1/4 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup dried cranberries(or other sugar
free dried fruit) *optional
Preheat the oven to 300 degrees Fahrenheit.
Add walnuts + pecans to a good processor + pulse a few times to break up.
Add in sliced almonds to the food processor + pulse a few more times.
*You don’t want to completely blend the nuts, but you want them finely chopped since they replace the grain in traditional granola.Transfer to a bowl with all other ingredients aside from dried cranberries.
Mix well to combine.
Transfer to a baking sheet lined with parchment paper.
Bake for 15 minutes, mix with a spoon + bake an additional 10-20 minutes or until golden brown. It will continue to crisp as it cools.
Remove from the oven, toss in dried cranberries, + let cool completely. Transfer to an airtight container(it stores for up to 2 weeks).
