Mexican Chopped Salad

Ingredients

Salad:
▪️1 head green/red leaf lettuce or romaine, chopped (about 2-3 cups)
▪️1 cup fresh or frozen corn(organic, non-GMO; fully defrost frozen)
▪️1 cup organic cherry tomatoes, chopped
▪️1-15 ounce can of organic black beans(can also use dried beans-soaked, cooked + cooled)
▪️3-4 green onion stalks, sliced (use white + green parts)
▪️Cotija
cheese, crumbled(organic, grass-fed)
▪️Tortilla chips(organic, non-GMO corn or grain-free such as Sieta cassava flour)
Dressing:
▫️1/2 cup sour cream(organic, grass-fed)
▫️1 Tbsp taco seasoning(I used our homemade seasoning)
▫️2 Tbsp fresh lime juice
▫️1 Tbsp water(or more to thin it out)

Directions

Instructions:
1️⃣To make the dressing:
Whisk your dressing ingredients together and keep them stored in the fridge while you prepare the rest of your salad. (The dressing should be fairly thick but you can add more water to thin it out as needed.)
2️⃣To make the salad:
Add your lettuce, corn kernels, black beans, tomatoes, and green onion to a large bowl and toss in your desired amount of dressing.
Sprinkle your cotija cheese over the top (if using) and serve immediately.

Notes

Homemade Taco Seasoning:

  • 2 Tbsp chili powder
  • 1 1/2 tsp paprika
  • 2 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne powder
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp dried oregano
