Mixed Berry Baked Oatmeal Muffin Cups

Ingredients

Ingredients:
▪️1 cup gluten-free oat flour
▪️1 cup gluten-free whole oats
▪️1 tsp baking powder
▪️1 tsp cinnamon
▪️1/4 tsp salt
▪️2 Tbsp hulled hemp seeds
▪️2 Tbsp flax meal
▪️1 1/4 cups milk of your choice(I used unsweetened almond milk)
▪️2 medium bananas, mashed
▪️1 egg, beaten(pasture-raised)
▪️2 tsp real vanilla extract
▪️2 tsp raw organic honey
▪️1 1-2 Tbsp avocado oil(or melted coconut oil or organic, grass-fed butter)
▪️1 1/2 cups mixed berries, frozen or fresh(chop strawberries into smaller pieces)
  * 1/3 cup almond slices

Directions

Instructions:
1️⃣Preheat the oven to 375 degrees. In a medium bowl, mix together the oats, hemp seeds, flax meal, baking powder, cinnamon, and salt.
2️⃣In a large measuring cup, whisk together the milk, honey, eggs, and vanilla. Add liquid mixture to dry mixture in the bowl and stir to just combine. Drizzle in butter or coconut oil while stirring, then add mashed banana, blueberries, and nuts.
3️⃣Spray 12 muffin tins with cooking spray. Distribute batter evenly into tins and bake for 17-20 minutes, or until the baked oatmeal is just starting to brown or a toothpick inserted in the center comes out mostly clean.
4️⃣Let cool for at least 10-15 minutes before removing from the pan and then serve. Refrigerate leftovers in a storage container for up to 5 days, reheating in a microwave or toaster oven before serving.
