One Pan Steamed Fish Dinner

Ingredients

  • 1.5 pounds wild salmon cut into 4 filets cut and 1.25 pounds halibut into 4 filets
  • 1 bunch of broccolini trimmed or baby broccoli
  • 1/2 bulb fennel or onion sliced very thin
  • 2 shallots thinly sliced
  • 10-ounce jar of artichokes cut in quarters
  • 1/4 cup pitted olives cut in half
  • 2 Tbsp olive oil
  • 1/4 cup jarred Calabrian chili peppers minced or pesto
  • 1 tsp salt
  • Pepper to taste
  • 4 lemon slices
  • 2 Tbsp butter cut into 4
  • 1/4 cup white wine

Directions

  1. Preheat oven to 425 degrees F
  2. Line the baking sheet with one piece of parchment paper.  Center the paper so there are 5 inches hanging over the shorter sides of the pan.
  3. Spread broccolini/baby broccoli on top of the parchment paper, followed by fennel, shallots, artichokes, and olives.
  4. Drizzle olive oil over the vegetables.
  5. Season with 1/2 tsp salt & pepper to taste.
  6. Top veggies with fish of choice.
  7. Top fish with Calabrian chili peppers/pesto, 1/2 tsp salt, lemon, and butter.
  8. Drizzle wine over fish and veggies.
  9. Cover fish and veggies with another piece of parchment paper.
  10. Starting from one side, fold both layers of paper towards the pan and staple to seal shut.  Do this on all sides to create a sealed pouch.
  11. Place in oven and cook for 12 -15 minutes depending on the temperature of your oven which varies.
