1cupfreshly grated carrots(110g)
1/4cupchopped walnuts or pecans

4ouncescream cheese(organic, pasture-raised)
1tablespoonsour cream(organic, pasture-raised)
2tablespoonpowdered sweetener(swerve, monk fruit)
1/2teaspoon real vanilla extract
Directions
Carrot Cake
Preheat oven to 350°F
Grate carrots if using them. If you choose to buy pre-shredded that is fine
Combine all dry ingredients in a mixing bowl
In a separate bowl combine all wet ingredients
Mix the dry and wet ingredients and scrape the sides of the bowl to make sure everything is combined
If using carrots or nuts fold them in here
Place in preheated oven for 30-35 minutes or until you can stick a toothpick in and it comes out clean
Cream Cheese Frosting
Cream sour cream and cream cheese together
Next mix in powdered sweetener.
Then mix until smooth
Add in the extract here and enjoy
Notes
Skipping the cream cheese frosting is an option. It will save on calories and this cake is delicious enough to eat without it.
Pecans or walnuts? I prefer walnuts but pecans work well as you can see in the photos. Yet, walnuts just give it a flavor that pecans lack for this particular cake. Whichever you have on hand works.
Add liquid sweetener for more sweetness. Even with the blackstrap molasses, this cake isn't very sweet due to the spices. For someone wanting a sweet cake add liquid sweetener I promise it'll do the trick.
