Ingredients
Salad:
- 1 large head radicchio, finely chopped
- 1 red apple, julienned
- 1/4 currants
- 6 Brazil nuts, chopped
- 2 scallions, chopped
Dressing:
- 1/4 cup extra-virgin olive oil
- 2 tablespoons champagne vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon raw honey
- sea salt and ground black pepper to taste
Directions
- Place all the salad ingredients in a bowl and toss to combine.
- To make the dressing, whisk together all the ingredients. Pour over the salad and toss.
