Sweet Potato Black Bean Quinoa Bowl

Ingredients

Ingredients:
▪️4 cups sweet potatoes, diced
▪️1 - 15 oz can black beans, drained + rinsed
▪️1 cup uncooked quinoa
▪️1 cup frozen corn
▪️1 red bell pepper, diced
▪️2 cups vegetable stock
▪️1 tsp chili powder
▪️2 tsp cumin
▪️1 tsp garlic salt
▪️1/2 tsp ground thyme
▪️Green onion, thinly sliced for topping
▪️Cilantro ripped or chopped for topping
▪️Avocado, sliced for topping

Directions

Instructions:
1️⃣Add all ingredients to the instant pot, and stir to combine.  Set on high pressure for 3 minutes.  Naturally, release for 8 minutes, then manually release the rest of the way.  Stir to mix ingredients together before serving.  Add your choice of toppings, and enjoy!
