Ingredients:4 cups sweet potatoes, diced
1 - 15 oz can black beans, drained + rinsed
1 cup uncooked quinoa
1 cup frozen corn
1 red bell pepper, diced
2 cups vegetable stock
1 tsp chili powder
2 tsp cumin
1 tsp garlic salt
1/2 tsp ground thyme
Green onion, thinly sliced for topping
Cilantro ripped or chopped for topping
Avocado, sliced for topping
Instructions:Add all ingredients to the instant pot, and stir to combine. Set on high pressure for 3 minutes. Naturally, release for 8 minutes, then manually release the rest of the way. Stir to mix ingredients together before serving. Add your choice of toppings, and enjoy!
