Sweet Potato Hummus

about 4 cups

Ingredients

  • 2 cups cubed roasted sweet potato
  • 1 15 oz can of northern beans rinsed and drained
  • 1/2 cup extra virgin olive oil
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 2 gloves garlic
  • 1/2 teaspoon salt

Directions

  1.  Roast the sweet potato at 425 F for 30 minutes on a baking sheet lined with parchment paper.
  2.  Add all the ingredients to a food processor and blend until smooth.
  3.  Serve and enjoy.

Store in the fridge for up to 5 days.
