Sweet Potato Hummus

Yields
about 4 cups
Ingredients
2 cups cubed roasted sweet potato
1 15 oz can of northern beans rinsed and drained
1/2 cup extra virgin olive oil
1/4 cup tahini
2 tablespoons fresh lemon juice
2 gloves garlic
1/2 teaspoon salt
Directions
Roast the sweet potato at 425 F for 30 minutes on a baking sheet lined with parchment paper.
Add all the ingredients to a food processor and blend until smooth.
Serve and enjoy.
Store in the fridge for up to 5 days.
